Akabu's sparkling is GALAXY using Ginga Ginga, but this one has similar specs, but is made from Daiginjo Yunokou with 40% polished rice. The bottle was slightly spilled when opened, but the carbonation was not too strong. The aroma is surprisingly acidic, with a hint of lactic acidity added to the pear aroma often found in nigori. The taste also has a full flavor, but overall it is a bit sour. It is refreshing, easy to drink, and delicious while still being very drinkable. It is not as sour as champagne, but I think it is close to its position in sake. Sour and dry with a relatively complex flavor, making it a very versatile type of pairing.
