Sawanoi's new sake, Honjozo Shiboritate. This is the new Honjozo sake that we had at the brewery opening the other day.
It is almost odorless. There is a kind of alcohol tang, but after that, nothing. Is this a characteristic of Tokyo's new local sake? A sense of melon for a moment...I would say this one is in the middle of the mid-palate, with a very well-balanced taste. Is it really new sake?
