🏆2023Tenmarking 10 Personal Sake Selections
There are too many kinds of Tenmei to keep up with, but among the modern-ish Nakadori series, Ichi-go seems to be close to the public image of Tenmei, and I'll try the one that came out in winter now.
It smells like a rummy.
It has already been long time and there is almost no gaseous feeling. It has a grapefruit-like sourness and banana-like sweetness, and finishes with an alcoholic spiciness.
When heated from room temperature to 40°C (104°F), the sweetness diminishes and it becomes more like grapefruit juice. This one is not bad, but it would be better as a cold sake.
The acidity is a bit strong, but the sweetness and sharpness are very pleasant, and the balance is excellent, with a particularly refreshing feeling. I would add it to my favorites.
