mikedasakeFirst time to try Saketaku. I've never had sake from Shimane before, and I'm glad I found this delicious sake.
The sake is smooth and gentle on the palate, with a moderate acidity to support it. The combination of new soba and wasabi (Japanese horseradish) goes well with this sake, so I served it with soy sauce pickled wasabi.
On the second day, it became less angular and went well with the Hyakunichin that came with it!
