Honro-no-matsu Yamahai brewed Koi Junmai-shu
15% 65% 720ml 1213yen
This is a brewery I have been interested in recently. I drank this brand last year and enjoyed it so much that I bought a bottle of the same spec fire-brewed version this time.
The first sip after opening the bottle.
Nice and juicy. The acidity is apple-like. The yeast is Nagano R yeast, which produces malic acid. The juiciness goes well with the Yamahai brewing method.
The aftertaste is bitter and spicy, very nice.
I tried heating it up, but I prefer it at room temperature or cold. The timing can be good at the beginning or during the meal.
And the price is a surprising 1,213 yen!
The rice is Miyamanishiki.
I was glad to repeat the experience.
I shared it with the boss of the Kinsho-kai and he understood the quality of this sake. I would have called him a bald man if he didn't.
The brothers of this brewery have been YouTubing for a year now, but they have been on YouTuber for a year, but they have been bored with it after 3 uploads.
