＜The flavor of the rice slowly builds up in the second half.
A while ago, we had a Junmai Ginjo Aizan from Tobiroki. This time, it is a special junmai. A brand name without a doubt. Let's drink it right away.
The aroma is gentle, but the rice is clearly sweet with a hint of lactic acidity.
The mouthfeel is smooth like water. Is it light? But then the sweetness of the acidity, centering on the umami of the rice, gradually comes through. Then, the rich umai-arumi aroma comes through.
For my third drink of the day, I was initially planning to drink another refreshingly fruity sake. But after drinking the previous Reaper, I was in the mood for a more robust sake. Tobiroki fulfilled my expectations perfectly. Just the flavor I was looking for. It was delicious!
If I were to use a Ghibli analogy, it would be Satsuki and May's father in "My Neighbor Totoro". I thought it would be plain, but the unique flavor of Shigesato Itoi's voice, which is not like that of a voice actor, comes through later on.
