shitakke
A unique, gentle sweet taste. Perhaps because of its 14% alcohol content, it gives the impression of a light sake, but it is mellow and has a strong umami flavor. It is full, acidic, and somewhat bitter. Perhaps this is the "Aquarius" feeling that some people describe. I know it's just a feeling, but it gives a thick feeling on the palate.
