じゅんちょる
This junmai ginjo-shu is brewed using local Aizan grapes from Banshu.
It is a juicy sake with a miraculous balance of "sweetness," "umami," and "sharpness," all of which may seem contradictory at first glance.
The sake is carefully fermented at low temperature for a long time, and the freshness and silkyness are enhanced by the Shin Gin rice polishing and gravity system adopted this season.
It is a bottle that reveals the depth of Aizan's nostalgia.
