This sake is from Nagasaki, and Nikomaru is the name of an edible rice grown in Nagasaki. This again shows that the sake brewing is rooted in the local community. The flavor of the rice is restrained. The acidity is also low, giving it a fruity, melon-like flavor. There is not much bitterness or heaviness, so it is very easy to drink. Perhaps because it is a draft sake, it also has a slight carbonation. I prefer this kind of easy-drinking sake to be served chilled. It may go well with snacks. It would also go well with Japanese food that does not have too strong a flavor. Sashimi, for example. It was a very good sake that made me think that such a delicious sake still exists.
