Junmai Nama" - Junmai sake squeezed in spring and stored for summer
The unique flavor and crisp acidity of junmai sake brewed with the edible rice akebono is said to bring coolness to the taste buds.
The sake rice is Akebono, the rice polishing ratio is 70%, and the yeast is undisclosed.
This was my first sake. Summer sake was also available, and I chose this one.
I had a well-chilled one ✨
It has a refreshing and crisp taste typical of summer sake, with a good balance of sourness and bitterness. It is an easy to drink sake with a hint of sweetness👍.
It also has a freshness that is typical of nama sake 😆.
We paired it with assorted sashimi, deep-fried corn and vinegared miso with eggplant. The sweetness of the corn in particular, not to mention the saltiness, went well with the sake 🤤.
