I enjoyed Togakushi, which I drank before, so I bought Matsuo from the same brewery.
The aroma is sour.
When you drink it, the liquid is quite smooth and you can taste the umami and sweetness of the rice. The clarity is wonderful and not at all cloying.
It is not a modern type of sake, but it is easy to drink.
It is a dashi-style sake that is not thick, but has a lot of flavor and is gradually delicious.
Naturally, it goes well with Japanese food! It goes well with the raw oysters from Naruse that I bought at the event 🦪It's a sake from a prefecture without a sea, but it's interesting that it goes well with sea food too!
