This is a special junmai made from the best rice for sake brewing in Hokkaido, Ginpu, Comet and Kitashizuku.
On the first day of opening the bottle, there was not much of an aroma and the mouthfeel was hard, so I left it for a day. It may have been too cold.
On the second day, the Kamidachi aroma started to rise. It is a good aroma that rises up fluently. The corners of the mouth have been removed and the roundness has come out. It has a good balance of sweetness and bitterness. It also leaves a faint aftertaste, but this is also just right! You can feel the kindness of the brewer.
There is no sense of gas, and the finish is gentle, so this is a bottle to be savored slowly.
