Junmai Ginjo🍶Miyama Nishiki🌾.
It is robust, thick, and a bit gushy, but it softens when drunk in a square. Probably very good when heated. I paired it with yellowtail, sea bream, salmon, tuna toro, tuna akami, kingfish, and kinme sashimi 😋.
