Happy New Year!
The first cup of the year was a bowl of Yukino Kayasha, since we are in Akita.
It is as clear as ever and has an exquisite balance of umami and sweetness. You can taste it well and the aftertaste disappears nicely. The finish is outstanding.
I may have written several times, but it was Kariho's Junmai Daiginjo that first got me interested in sake.
There are delicious sake all over Japan, but I still have a special feeling for Akita.
Even the Yamahai sake, which I discovered I didn't like when I started drinking sake in earnest, tastes good with Snow Kayasha. Sake that you can buy at the supermarket is delicious.
I believe that there are still many good Yamahai sake and good sake that can be bought at supermarkets in Japan, so I would like to drink them again this year, taking care of myself. Thank you again for your support this year.
