I wondered how long I would be able to drink the "soul sake" of Master Noriguchi, who has a home in Noto, and so I rushed to order some.
The balance of the four flavors and smoothness of this new sake is truly a work of art. The transparency of the less polished Gohyakumangoku, the high quality at all temperatures, and the beauty that transcends likes and dislikes, good and bad, are impressive.
The last cup, which is often associated with the tailings, is the best.
