Akita Prefecture ③.
Maizuru Sake Brewery in Yokote City
Just the name makes you think "Kyoto? I would think so😅.
I only knew about the brewery in Tatemae, but I heard Ikoma-san said the building of this brewery was broken, so I went back home and looked at the street view, and it's in a collapsed state...
I found out that the brewery collapsed due to snow damage in 2008, the kettle, koji room, and vat room in 2010, and the warehouse collapsed due to the Great East Japan Earthquake in 2011...
It seems that the brewery is now being manufactured by Akita Fermentation Industry of Ippodo Senryo.
In addition to Tafresh, there is another brand called Asanomai, and Tsukishita no Mai was originally released under the Asanomai brand name.
Polishing ratio 55% Sake Komachi 15% Sake degree -3 Acidity 1.7
Amino acidity 1.4 2090 yen?
It used to be a dry type with 50% polished rice and Gin no Sei rice.
It is said to be an old sake that has been aged for a long time. According to the online information, it was aged for about 10 years in the 27th year of the current year.
It is sweet but still has a strong sense of maturity.
I would like to drink it fresh, but I guess it's difficult since it seems that Denfresh is also an aged sake 🤔.

Good evening, Mr. Nemuchi.
Ahh, my memory is falsifying again 😱.
I guess I need to write down more than just the taste 🤔.
