This Junmai Daiginjo, brewed to commemorate the 300th anniversary of the company's founding, is made from Yamadanishiki polished to 12% and brewed with Kikkyo yeast No. 12.
It had an extremely clear and elegant texture on the tongue, yet was well-balanced with the complexity and acidity brought out by the sake yeast!
