The tasting is too much fun as it is in 10% increments from 100% polished rice percentage!
This time it was Blue 90
Aroma is sour like Shaoxing sake
The color is light amber.
The mouthfeel is smoother than expected, with a refreshing sourness spreading first.
After that, there is a graininess and sweetness.
The graininess that passes through the nose gives a sense of calmness.
The acidity is caused by the koji used for shochu (rice malt), white koji I think.
Thanks to this, it is refreshing and crisp. ✨️
The most impressive thing was the 100% polished rice ratio! Brown rice!
It left a very strong graininess after drinking!
