Kurumazaka Ryou no Junmai-shu Rice:100% Tamakae produced in Wakayama Rice polishing ratio: 65 Alcohol content: 15.6 Sake degree: +3.7 Acidity/amino acidity: 1.9/1.2 Yeast used: Association 901 yeast Master brewer: Akiko Fujita 2,420 yen, 1,800 ml Cool and fresh summer sake This junmai-shu is made with Tamakae rice produced in Wakayama Prefecture for both koji rice and kake rice, and is a "summer sake" that has been stored for six months after one fire-irrigation. It has a pleasant aroma of fruit and a youthful fragrance reminiscent of herbs. It has a refreshing taste with a hint of acidity and is light and easy to drink. It has an early summer atmosphere when paired with grilled sweetfish or pickled summer vegetables.
