Kudokibe Junmai Ginjo Raw material rice Miyamanishiki Polishing ratio 50%. Yeast: Ogawa No. 10 Sake degree ±0 Acidity 1.2 Alcohol 16-17%. Served with roast duck at Uoichiya in Shin-Maruko. Almost no acidity, with a strong umami flavor, in contrast to the blanched cat we drank it with. Gorgeous aroma. Excellent with roast duck!
