Bisho Special Junmai CEL-24 The last sake of 2023 is Bikuyo CEL-24 The first experience with CEL-24 yeast. It has a pineapple-like aroma, sweetness and acidity, and a clean finish without being cloying. It stimulates the tongue with just a little bit of a shriek. It is like a sweet juice. A new experience. Maybe it tastes better than I imagined. It's not too sweet and has just the right amount of sake flavor. Have a good New Year!
