I asked the owner of a kappo restaurant where I enjoyed sake and food in Toyama, "What kind of sake do you like in Takayama? He recommended Hourai, a limited edition sake with the lot number specified.
It has a rich aroma, rich umami and sweetness, but also has a high acidity and a nice sharpness. It is delicious.
