Although our Christmas is not Champagne, we opened a bottle of a new wine from a gaseous producing region just to get in the mood 🍾.
The nose is mild, with a lactic acid aroma.
In the mouth, it has a sour and fruity aroma reminiscent of plums, and is a bit like plum wine with soda. The gaseous sensation is more subdued than in previous years.
The taste is moderately umami and moderately sweet, as is usual with Sanzu. It has a fruity and cool taste like Japanese pear.
It was fresher than usual, which is only possible with new sake. ☺️
