The rice is "Aizan" that survived the disaster, the yeast is Kanazawa yeast, and it is made with the "Namo" yeast that Yutaro Mori, the toji at Mori Sake Brewery, is known for! The sweetness of the Aizan and the acidity of the yeast is irresistible. The acidity is irresistible! I was about to drink too much, but I held it in and drank it gratefully 🙏!
