Fruity and sweet like green melon, but with a relatively fresh aroma.
It is certainly fuller than summer sake, but it does not have the smell of maturity or outstanding flavor that is common in autumn sake.
The taste is even more unexpected.
There is a strong acidity that is not apparent from the aroma.
The sweetness is not strong, but the umami is even less pronounced, and the overall flavor is sweet and sour.
Refreshing and easy to drink.
Certainly a different style from the previous Akabu.
Whether it is appropriate for autumn or not, this is delicious and new!
If you look for a close sake in your memory, it's quite similar to Shinmasa
Low alcohol, low amino acids and strong acidity, sweet and sour.
I think we may be seeing more and more of this kind of sake in the future.
