It's been a while since I've had Hachibei.
I thought it would be a little harsh because it was brewed in 2020, but it was refreshing!
It is a balanced type. The sweetness and aroma are very gentle and easy to drink. Hachibei is naturally more of a food sake than a sake by itself.
I bought some bonito today, so I had it pickled. No doubt about it!
It's delicious!
