For the first time in my life I️ was able to get my hands on a bottle of the popular and hard to find Jijima 😆 I went to my parents' house to taste it with my dad since drinking it alone might be a bad idea 😋.
The aroma is refreshing, like green apples. On the palate it's fresh and sweet with a tangy gassy feel. It's wonderfully mellow and glides down the throat, leaving a fruity and bitter taste in the nose, and then snaps out of it quickly🤣.
The brewer, Tadakatsu Onishi, says, "Don't get caught up in the past, don't get caught up in the future, just live in the present to the fullest. The word "Jikin" means "the moment of now", so the name of the sake is also a reflection of the Toji's thoughts😊.
