It's been a while since I bought a bottle of Akabu 🍶It's a great time of year to get new Akabu sake, which is delicious even when fire-aged ✨.
The aroma is so gorgeous you'd think it was a ginjo sake.
The taste is clean and crisp, with just enough umami to keep it from being overpowering. The fragrance is fruity and sweet, but the taste itself is not sweet. There is no bitterness.
I had lumped it all together in the category of notable brands by young toji, but when I drank Akabu again, it (naturally) had different characteristics from other sakes, which is interesting☺️.
