Mild aroma. It has a rich and rich flavor for a honjozo, and is easy to drink without being unpleasant. When heated, the acidity becomes stronger and the balance is lost. What is this, a honjozo limited to chilled? I've heard rave reviews about this on X and elsewhere, but I honestly didn't understand it.
But I have experienced many times with local sake that last year it was good, but this year it was bitter or had a different flavor, so there may have been times when it was good. Unlike major sake breweries, where the quality is stable, local sake breweries in the countryside are not always the same, which some people find interesting, but I would like to see the standard sake to be stable.
