<Sour and bitter, thick and bitter, with a hint of sweetness and a touch of spiciness.
The color is dark white.
The aroma is only slightly bitter. It does not seem to be sweet.
The mouthfeel is a mildly acidic, shuwa shuwa shuwa. Then, the bitter flavor starts to appear.
Oh, it is not sweet at all. It is a dry nigori. The acidity is yogurt-like lactic acid, and there is a strong bitter taste. The aftertaste is also bitter.
To be honest, I am not so good at non-sweet sake. But this one was not sweet at all, yet I could honestly say it was delicious. I'm glad I was able to drink it!
If I were to use a Ghibli analogy, it would be the Haku dragon from "Spirited Away. It is Haku in the form of a white dragon. It is not the gentle Haku that I compared to Kuroten-san of Amami just the other day, but anyway, it is crisp and cool.
