The overall flavor is mellow, which is a good indication that it is an autumn sake. It has a strong umami flavor and good sharpness. It also has a slightly bitter taste, which is not bad. However, the aroma (vinegared ethyl acetate?) that lingers in the nose is not good. It is not so good. We will see how it progresses.
