It's been a long time since I drank Shichiken! I haven't had it in about 5 years! To begin with, I don't have much of an image of sake in Yamanashi because of the wine, but Shichiken is definitely a sake. The bubbles gently pop in your mouth. It is not too stimulating, but just right. It has a ginjo aroma, but the aroma is quite weak, so it seems to be drowned out by the smell of the food we ate that day. LOL! I drank it without mixing the tailings. It is slightly sweet. It also has a sourness that is catchy...but the umami is definitely lacking! It is clearly lacking. When I mix the tailings... the umami of the rice is added and it is delicious! It also has an aroma similar to that of Shinkame's active nigori. I was amazed at how different the flavors were! I am amazed! Since it is a sparkling wine, take your time when stirring it slowly and gently. The sparkling mouthfeel and low alcohol content of 11% make it a light sake, but with the added umami from the tailings, it is a well-balanced sake that is delicious to drink. It is a sake that can be enjoyed by beginners as well.
