Tonight's accompaniment is a bottle of this one. The rice is Hyakumangoku No Shiro. It's been a while. When the bottle is opened, there is a surprising sound. The aroma is modest and fruity. When you put it in your mouth, you will feel a strong shwash followed by a firm acidity. It is like a carbonated fruit juice. Perfect for summer! (It's already autumn.) When drunk in a champagne glass, the acidity softens and the sweetness comes out. Delicious! When paired with okra seasoned with sugarcane vinegar, it becomes sweet and shwashy, yummy! It also goes well with silver Spanish mackerel marinated in sake lees. It was like a low-alcohol sparkling wine!
