Tenyumi means "rainbow after rain," and they collaborated with Tohoku University of Art & Design on the label design. The toji (master brewer) is Mr. Jin Masashi, who has won the gold medal at the National New Sake Competition for 10 consecutive years. I had tasted Suiuyu before and enjoyed it so much that I bought this one to try as well. Suiu was a completely fruity and sweet sake, but this is a Yamahai sake with a strong rice flavor. It tastes like rice and melon. It is not sweet, but umami, and goes well with strong-flavored dishes. The aftertaste is quite clean and unctuous. Although I prefer floral and fruity sake, I could really feel the deliciousness of this kind of sake with a rice flavor. The enjoyment of pairing it with food may be profound. It went well with curry and kushikatsu. Is it versatile? Delicious both warmed and cold sake. Purchased from: Gomotsuki Masumoto
