Dry type of Mimuro Sugi.
The specs are a special junmai sake made from 60% polished dewy leaf wind.
As a dry sake, it does not have much aroma, but it has a sharp, dry mouthfeel that is quite good.
The acidity comes in later, so even though it is dry, it also has umami.
It seems to go well with a wide range of dishes and can even be served warm.
It is the type of sake I would like to have at home.
