I can feel the acidity at room temperature.
I like Yamahai and Nama-moto, and the acidity is moderate and pleasant for me.
The taste is impressive with its mildness and the spread of umami in the mouth, just like an autumn sake.
The acidity is more pronounced when heated to lukewarm.
Be careful not to heat it up too hot, as the spiciness will be more noticeable.
