This is my first time at the brewery.
I looked back on my history and found that I had only had one cup of sake from Shimane Prefecture.
Sake from the Sea of Japan side has a strong image of light and dry, but there are quite a few modern sakes available these days. Now, how about this sake?
Since it is a pure sake, it has a peach or lychee-like aroma from the moment it is poured into the usual sake cup, but the aroma is not showy, and it is very subdued. It is somewhat San-in-like.
Imagining from the fragrance that it is a modern sake, I try to drink it. The bitter taste comes along with the soft aroma.
As I continue drinking, the spiciness comes in the middle to the latter half of the bottle, and the bitterness lingers strongly. However, the sweetness also remains. It is a very interesting and new sensation.
It was developed by a female brewer, so I have the impression that the basic line has not been changed, but modernity has been added. It is quite an interesting sake.
