The aroma is subdued, but not fresh, with a slight bottom note like steamed rice or melon.
The taste is balanced, with all elements averaging out. The balance between sweetness and acidity is good, making it easy to drink. You can also taste the flavor of koji (malted rice).
It goes well with basically anything, but among the dishes I had, it was good with negitoro (tuna with green onion).
