Not the usual Daiyako Shuzo, but Horai from Watanabe Shuzo in Gifu.
It's a ginjo-shu, but it's so fragrant you'd think it was a daiginjo. Behind the pear aroma, there is a jasmine-like aroma and a kumquatse-like aroma. Is it the aroma of the wooden vat? However, it is not a strong smell like a barrel sake, so it is not unpleasant.
Because of the high aroma, it seems to be rich, but the taste alone is smooth and clean, with a good crispness. It is not sweet, but it has a sweet taste.
It would be better to match it with western food which smells like cheese or smoked food than Japanese food which enjoys delicate smell.
