This Yamahai Kijoshu is made from rice and sake that was rescued from a brewery that was completely destroyed in the Noto earthquake. I have never been a fan of kijoshu, but this one is very easy to drink. It is fresh, crisp, and juicy, with an excellent balance between sweetness and acidity without being too sweet!
