madamarr（まだまーThe seventh and final sake of the Sake no Jin is Garakudai Zuika from Tenryohai Shuzo brewery on Sado Island, which has been the talk of the town for a while now. I took a sip and found it to be perfectly balanced. A little bit of tangy sweetness, followed by umami that spreads and disappears with a faint aftertaste. I felt that nothing was too much, and it had a sense of refinement. This will be a regular at next year's sake festival, though there are too many regulars (laugh).
