I bought this one because of the sparkling 😊.
It's a bottle of organic naturals with a very ancient method, no yeast, no additives, no sake yeast, wooden vats........
Kame-no-o 90% polished, 14% alcohol
It's a hot and humid day for sparkling 👍.
I was caught off guard by the simple aluminum cap and opened the bottle.
A true sparkling 🫧🫧.
The glass was full of bubbles and sooty!
The aroma is rummy, muscat, and Japanese pear type.
Contrary to my expectation that it would be dry and sour since it is a Senkyoku, my first impression was sweet and delicious.
It is fresh and is wrapped by strong gas, but it has a nice flavor of sake yeast and lactic acidity.
The second glass was a different impression, and the astringency and sharp bitterness of the wooden vat came to the fore!
The change in flavor is fun!
It was more delicious than I expected.
