Sake Drinking at Rashai (7) Next up was Jikin! The sake rice is Hakutsuru Nishiki! It is Hakutsuru Shuzo's original sake rice and is a crossbreed of Yamadanishiki's parents. The Hakutsuru brewery developed this rice and uses it in their Jikin sake. I am deeply moved by this. I wonder if we can make better sake if we all incorporate the best parts in this way!
On the palate, the umami from the apple-like fruity flavor comes rushing in. It also has a slight acidity and a moderate aftertaste. It certainly tastes like Yamada-Nishiki. It's really delicious!
