Another NEWBORN Junmai Ginjo to look forward to...
I will open it while I can compare it with the Junmai I opened the other day!
When I twisted the cork, I heard a light "psshhhh" sound. It was just like a "new born"👍.
The aroma is mellow and sweet, like banana and melon, which I have felt in previous years, but this year's aroma is a little more mellow. The flamboyance is a bit subdued?
In the mouth, the first sensation is a pleasant, slightly carbonic acidic stimulation. The freshness unique to nama-shu is in full bloom. ‼️
Somehow it seems to be less sweet and more dry than in previous years. Last year it was like a fruit juice, but with a refined sweetness and flavor.
This year, a bit of bitterness peeks out and seems to be a nice accent 😲.
Last year's Junmai-Ginjo is closer to this year's Junmai, and this year's Junmai-Ginjo is less sweet and has more umami and sharpness.
