Shinkame's hiyaoroshi, the standard type, is aged for two years or more, but this one has been aged only one summer, so it tastes a little lighter. However, the bitter flavor typical of Shinkame is still present. The sweetness of Yamada-Nishiki can be felt moderately, and it was the perfect combination with grilled Sanma, the king of autumnal delicacies.
