On October 23rd, I visited the Naminoto Sake Brewery in Kata, Shiga Prefecture.
The brewery runs a restaurant called Yohkaro, which is open only from June to September when the brewery is not making sake.
The building was renovated from the previous owner's residence, and the location was perfect, with a view of Lake Biwa through the pine trees in the garden ✨.
The second bottle they served us was a Junmai Ginjo tobotsukuri✨.
It was brewed with 901 yeast at a 50% milling ratio of Yamadanishiki with an Alc of 16. A daring ginjo with a daiginjo class rice polishing ratio!
Mmmmmmmmmm 😍💕
It has a more crisp aftertaste than the previous daiginjo, which makes it perfect with a meal 💮💮.
The president said they are aiming for a sharp and versatile all-around food sake, but with a good balance ✨.
