A slightly expensive bottle of my favorite Toyoka (when I say expensive, it's about 2,400 yen for a 4-goupe bottle, so it's not really expensive, but really a little expensive 😆)
The balance that is typical of Toyoka is more elegant. I tried pairing it with various tsumami at home, but fresh sea urchin didn't go with it, nor did cheese or olive oil Western-style side dishes, so what I ended up with was a side dish carefully cooked in dashi broth. Just fresh boiled vegetables with "walnut miso" bought in Shimosuwa fit the bill. It is a beautiful sake that is typical of Japanese sake that makes the most of quiet Japanese side dishes.
It is exquisite on the day of opening the bottle, and after a few days, a slightly sweet taste comes out in the front.
