4. junmai sake from Akabe. Sweet and juicy on the palate. As is typical of Junmai sake, it has a strong flavor, but it is clean and refreshing without being lingering. A little acidity would be nice. Junmai-shu, 60%, about 1400 yen, Hasegawa Sake Brewery, Tokyo Station.
