Gohyakumangoku from Hyogo Prefecture is used. It has been a long time since it was made with a high alcohol content of 19%. It has been 4 years and 5 days since the last Shiso Old Pine. It is thick and mellow, but not peculiar, so you don't feel the high alcohol content. Sweet and sour, but sourness and spiciness prevail. It is sweet and sour, but the acidity wins out and the spiciness prevails, and it is a little nutty. The label is written by Kawaya Satsuki, a calligrapher in Himeji, and "Satsuki" means "to light up people.
