Rice used: Hitogochiki grown in Nagano Prefecture Polishing ratio: Koji rice: 55% Kake rice: 70 It has a good balance of sweetness and acidity. Although it is a hi-iru Junmai spec, it has a slight gaseous feeling and no cloying taste. The umami of the rice can also be felt later on, making it very tasty. The sweetness is exquisite on its own, of course, but does not interfere with meals. We were able to visit the brewery and had a very satisfying Bon vacation!
